Mint, the cool herb
With its distinct aroma, pleasing flavor, cool sensation and medicinal qualities, mint is among the most versatile plants in the herbal kingdom.
Mint contains a number of vitamins and minerals, which are vital to maintain a healthy body. Mint is rich in Vitamins A and C and also contains smaller amounts of Vitamin B2. Mint also contains a wide range of essential minerals such as manganese, copper, iron, potassium and calcium. Keep mint in the refrigerator, wrapped in paper towels and enclosed in a plastic bag.
Mint is known to have originated in Asia and the Mediterranean region. In many cultures, mint symbolized hospitality and was offered as a sign of welcome and friendship to guests as they arrived. In the Middle East mint tea is still served to guests on their arrival, whilst in ancient Greece, the leaves of mint were rubbed onto the dining table, which was a sign of their warm greeting.

Mighty Myste Mint Avocado Dip
6 ounces avocado, scooped out of a medium avocado with a spoon (about 1 cup of fruit) – Produce
4 ounces English cucumber, peeled, halved, seeded and sliced (about 1 cup of cucumber) – Produce
1 jalapeño pepper, stem end trimmed, rough chopped (including seeds) – Kit Kitchen
1/3 cup Greek yogurt mixed with 2 Tablespoons water – Aisle 10
1 1/2Tablespoon lime juice – Produce
Salt & Pepper to taste
1/2 cup mint, packed

Combine ingredients in a blender and puree until smooth. Taste for salt and adjust if needed. Transfer mixture to a bowl, cover with plastic wrap (pressing down so plastic is touching the surface of the mixture) and refrigerate until needed.

Spicy Mint Avocado Dip – recipe above

Divide salmon into small chunks that will fit on the pita chips. Place large whole pita chips on your serving platter. Layer salmon on chips. Place good dollop of dip on top of spicy mint avocado dip on top of salmon. Sprinkle salt & pepper and then garnish with chili threads and gobble up.
