2 apples, cored and cut crosswise into 1/2-inch thick rounds
1 teaspoon lemon juice (optional)
3 tablespoons FRESH ground peanut, cashew or almond butter
3 tablespoons FRESH signature granola
Start by brushing the apples slices with lemon juice to keep them from turning brown.
Spread one side of half of the apple slices with the FRESH butter of your choice then sprinkle with granola. Top with remaining apple slices, pressing down gently to make the sandwiches. Then gobble up!
Apple Cheddar Salad
2 apples, sliced
¼ pound of smoked cheddar cheese, cubed
4 cups of loosely packed spinach
¼ cup of apple cider vinegar
¼ cup of whole grain mustard
¼ cup of honey
½ cup of olive oil
Whisk vinegar, mustard and honey together in a bowl. Slowly pour in oil while whisking until fully incorporated. Add apples, cheese, spinach, season with salt & pepper and toss gently and serve.
