Easter Brunch Shrimp Apple Salad with Black Fig Vinaigrette
For Body of Salad:
½ Radicchio head (cored and diced)
1 medium green apple, julienned (cut like match sticks)
2 cups of baby spinach (rough chop)
¼ cup of Satori Regal Blend shaved cheese ( blend of Parmesan, Asiago and Romano )
6 grilled shrimp (FRESH Chef Prepared)
2 Tablespoons of sliced almonds or walnuts (for garnish)
For Black Fig Vinaigrette:
¾ cup of Almond Oil
¼ cup of Cuisine Perel Black Fig Vinegar
Salt & Pepper to taste
½ teaspoon on traditional mustard
Wash radicchio and apple. Core radicchio and dice, then place in medium size bowl. Core apple, then julienne and add to bowl. Rough chop baby spinach and add to bowl. Add cheese and lightly toss.
Place almond oil in a small bowl. Whisk in mustard. Gradually whisk in vinegar. Season with salt and pepper and set aside.
Place salad mixture on serving plate. Top with grilled shrimp (or you can use grilled chicken). Drizzle dressing over plate and garnish with sliced almonds. Then devour!
